Microwave meatballs:
Mince (500g or so)
1 chopped onion
1 tbsp soy sauce
1tsp powdered stock
2 tbsp tomato sauce
1/2 cup rolled oats

mix together then into balls with wet hands. Microwave until cooked (about 6 minutes, turn them at 3 mins)
serve on rice with brocolli and a can of tomato pasta sauce and grated cheese.

CHIckee eXtendo! One cooked chicken, deboned and featherless. Create a gravy the easiest way you know, but make lots! Add any frozen veges. Sip wine. Add dissected chicken and mix. Sip wine. Make a stuffing mixture, melt butter and mix into stuffing. Sprinkle liberally over chicken. Sip wine and grate a little cheese sprinkle on top and bung into oven. Mwahlah! You've created a meal to feed an army and you never looked more beautiful and relaxed doing it. Wonder Woman!!!

I posted it on Marilyn's cookbook blog too, but my favourite easy recipe is apricot chicken. I usually make it when we've got people over for dinner because it pretty much cooks itself and it's SO yummy!
You brown the chicken, then add onion, red capsicum and mushrooms, then you tip in a can of apricots, juice and all, and some mixed herbs and chicken stock and let it simmer for a while. Then you add some lite coconut cream and simmer for a bit more, and voila, a meal! You just adjust your quantities to however many people you're serving. Goes perfect with rice. Mmm, yummy...

Mmm, I'm all for quick and easy! Lis, I do a one-pot wonder too, except I do it on the stove top! Pretty much the same as you except without the potatoes and I usually use mince, I add a bit of herbs and mixed spice (sounds weird, but really good!), then chuck in dry pasta and some water and just make sure you check on it so it doesn't stick to the bottom or run out of water! Easy!

nice and cheap and takes less then 20 mins!
ingredients - rice, as many hard boiled eggs as u like, 1 onion, garlic, mushrooms, tin of tuna for the cheap version or any smoked fish.
boil eggs and rice, chop onions and mushrooms and fry with garlic in oil untill soft, when rice is nearly ready add tuna to the onion ect and heat untill tuna is hot and season with as much salt and pepper as u wish, then put rice on plate wit htuna on top and boiled eggs cut up on top! also to make it even more filling get a piece of puff pastry on a bking tin and fill with rice, tuna and eggs then cover with another peice if puff pastry and make a pie, glaze with egg and cook at 180 for 20mins, takes longer with the puff pastry but worth it! yummy with wedges and salad. really cheap and quick. great idea for a group.

Quick to prepare leave to cook

Meat loaf

500grams mince
500grams sausage meat
1 grated onion ( ijust chop it finely)
2 slices bread soaked in milk
2 tablespoons tomato sauce
dash worchester sauce
1 egg
salt
half teaspoon of Oregeno(if you have any if not dont worry) and basil and rosemary
1 grated carrot

Soak bread in milk, mix all other ingredients, including egg and bread etc. Put in loaf tin, cook at about 180dregrees, for about 1 hour.

I love my crock pot in the winter, silverside beef is lovely.
